Recipe Description
Salsa with chunks of chicken, plus tortilla chips, turn a favorite snack into a heartier first course. If you are a fan of hot and spicy foods, spice up the salsa with a few drops of hot pepper sauce.

Ingredients

8 Ounce(oz)  tortilla chips
3/4 Cup(c)  chunky style salsa
2 Cup(c)  finely shredded mexican natural cheese blend
1 Cup(c)  pulled bbq or mesquite chicken chunked
1   tomato, chopped
15 Ounce(oz)  black beans, drained, rinsed

Preparation

 

Heat oven to 400 F and line a 15 X 10-inch baking pan with foil. Spread half of tortilla chips evenly in foil-lined pan.

In medium bowl, combine salsa and beans; mix well. Spoon half of bean mixture over chips. Top with half each of chicken, tomato, and cheese. Repeat layers.

Bake at 400 F for 12 to 14 minutes or until the cheese is melted. Serve immediately!
