Recipe Description
This beautifully layered lasagna dish incorporates chicken, spinach and mushrooms in a creamy white sauce. This is one of my favorite meals to share at a potluck, as it is a real crowd pleaser.

Ingredients

9   uncooked lasagna noodles
3 Cup(c)  milk
2 Teaspoon(t)  italian seasoning, dried
1 Teaspoon(t)  garlic salt
1 Cup(c)  chicken broth
3 Tablespoon(T)  cornstarch
1/4 Cup(c)  parmesan cheese, grated
12 Ounce(oz)  frozen cut leaf spinach, thawed and squeezed dry
1/2 Cup(c)  green onions, chopped
1 Cup(c)  mozzarella cheese, shredded
2 Cup(c)  fresh mushrooms, sliced
2 Cup(c)  cooked chicken, cubed

Preparation

Cook lasagna noodles to desired doneness as directed on package. Drain and place in cold water. Meanwhile, heat oven to 350 degrees F. In large saucepan, combine milk, Italian seasoning and garlic salt. Bring to a boil. In small bowl, combine broth and cornstarch. Blend well. Slowly add cornstarch mixture to hot milk mixture, stirring constantly. Cook over medium heat for 5 minutes, or until bubbly and thickened, stirring constantly. Stir in Parmesan cheese. Drain noodles. Spread 1/2 cup white sauce in bottom of ungreased 13 by 9 inch (3 quart) baking dish. Top with 3 noodles. In medium bowl, combine 1 cup white sauce, all the spinach, green onions and 1/2 the mozzarella cheese. Spread evenly over noodles. Arrange 3 noodles over spinach mixture. In same medium bowl, combine 1 cup white sauce, mushrooms and chicken. Spread over noodles. Arrange 3 noodles over chicken mixture. Top with remaining white sauce. Cover tightly with foil. Bake at 350 degrees F for 50 to 55 minutes, or until hot and bubbly. Uncover. Sprinkle with remaining mozzarella cheese. Let stand 15 minutes. If desired, garnish with fresh Italian parsley.

Additional notes

Tip: To quickly thaw spinach, place in colander or strainer. Rinse with warm water until thawed. Squeeze dry with paper towels.
