Recipe Description
Mixing the mayonnaise with plain yogurt reduces the fat and boosts the calcium content of this dish. Serve with toasted pita bread.

Ingredients

1 Pinch(pn)  pepper, to taste
4   sprigs of fresh mint, to garnish
1 Pound(lb)  chicken tikka
4 Cup(c)  mixed salad greens
1 Pinch(pn)  salt, to taste
2 Teaspoon(t)  fresh mint, chopped
3   green onions, finely chopped
4 Tablespoon(T)  cucumber, grated
4 Tablespoon(T)  mayonnaise
4 Tablespoon(T)  plain yogurt

Preparation

Mix the yogurt with the mayonnaise, cucumber, green onions and mint, blending well to make a dressing. Season to taste. Cover and chill until ready to use. Just before serving, arrange the salad greens on a large serving plate and top with the chicken tikka. Spoon the cucumber, mint, and yogurt dressing over the chicken and garnish with sprigs of fresh mint.

Additional notes

Note: Chicken tikka is a popular Anglo-Indian dish based on tandoori chicken. Smoked chicken or turkey would be a good substitute.
