Recipe Description
Both the chickpeas and the roasted peppers can come from cans, so there is little preparation for this salad. Serve it as a side salad at dinner, or as one part of a meal made up of a selection of salads and spreads.

Ingredients

2 Cup(c)  cooked chickpeas, drained and rinsed well
1   roasted red pepper, chopped
2 Tablespoon(T)  fresh parsley, chopped
2 Tablespoon(T)  red onions, chopped
1 1/2 Teaspoon(t)  extra virgin olive oil
2 Tablespoon(T)  lemon juice
1 Teaspoon(t)  red wine vinegar
1/8 Teaspoon(t)  pepper, freshly ground
1/4 Teaspoon(t)  kosher salt
1/2 Teaspoon(t)  coriander, ground
1/8 Teaspoon(t)  tabasco sauce

Preparation

Stir together the chickpeas, red pepper, parsley and onions. Whisk together the remaining ingredients. Pour the dressing over the chickpeas. Stir to coat.
