Recipe Description
Liven up time tested hoe cakes with green chiles and corn. These cakes stir up in 10 minutes. Golden brown and hot off the griddle, they can be served with butter or syrup.

Ingredients

1 Cup(c)  frozen corn niblets, thawed
1 Cup(c)  cornmeal mix
1/2 Cup(c)  buttermilk
1/2 Cup(c)  boiling water
4 Ounce(oz)  green chiles, chopped and undrained
1 Tablespoon(T)  vegetable oil
1/4 Teaspoon(t)  cumin, ground
2 Tablespoon(T)  butter

Preparation

Whisk together first 7 ingredients, whisking just until dry ingredients are moistened. Batter will be thin. Spoon batter by level 1/4 cupfuls onto a hot, 375° greased griddle, or a greased non stick skillet over medium high heat. Cook, in batches, 3 to 4 minutes, or until tops are covered with bubbles and edges look slightly dry and cooked. Turn and cook until done. Serve with butter.
