4 | Ounce(oz) | mushroom pieces, drained | |
1 | loaf whole wheat french bread | ||
1 | Cup(c) | cheddar cheese, shredded | |
1 | Cup(c) | part skim mozzarella cheese, shredded | |
1/4 | Cup(c) | parmesan cheese, grated |
Preparation
Preheat broiler. In large skillet, heat olive oil over medium heat. Add onion. Cook and stir until crisp tender, about 4 minutes. Add chili and drained mushrooms and bring to a simmer. Simmer for 10 minutes, stirring frequently. Meanwhile, cut bread in half lengthwise and place, cut side up, on cookie sheet with sides. Broil 6 inches from the heat for 4 to 6 minutes, or until toasted. Remove from oven. Turn oven to 400° F. Spoon chili mixture over bread and sprinkle with cheeses. Bake for 20 to 25 minutes, or until pizzas are hot and cheese is melted and beginning to brown. Let stand for 5 minutes, then cut and serve immediately.
