Chilled Shrimp With Pineapple And Papaya Salsa

Gently stir fried shrimp are served over a fresh fruit salsa, in this delicious recipe.  An outstanding appetizer for a summer evening, or dinner party.

2 1/2 Teaspoon(t)  lemon juice
1 Clove(clv)  garlic, very finely chopped
1/2 Teaspoon(t)  cumin, ground
2   scallions, very finely chopped
1   small pineapple, halved, cored, peeled and diced
1   large papaya, halved, seeded, peeled and diced
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  black pepper, to taste
48   shrimp
1 Clove(clv)  garlic, crushed
2   fresh red chile, seeded and chopped
4 Tablespoon(T)  sunflower oil

Preparation

To make the salsa:  Place the papaya in a large bowl with the pineapple, scallions, 1 chile, garlic, lemon juice, cumin, salt and pepper.  Adjust the lemon juice, cumin, salt or pepper to taste, if necessary.  Cover and chill at least 2 hours to allow flavors to combine.  Heat a wok over a high heat.  Add the oil and swirl around, then add the remaining chile and garlic.  Stir fry for 20 seconds.  Add the shrimp and stir fry for 2 to 3 minutes, until the shrimp are cooked through, become pink, and curl.  Tip the shrimp, garlic and any oil left in the wok into a heatproof bowl.  Let the shrimp cool and marinate in the chile oil.  When the shrimp are completely cool, cover the bowl and chill for at least 2 hours.  When ready to serve, give the salsa a stir and adjust the seasoning.  Arrange a mound of salsa on each of 8 plates.  Remove the shrimp from the marinade and divide among plates.  Sprinkle with freshly chopped parsley, if desired, and serve.
