Recipe Description
These buns are excellent! Steam them and serve them hot. They are truly delightful served with a barbecued meal or with a stew. I make them using the bread machine to knead the dough. You can make them by hand, if you prefer, by simply starting with the usual yeast sponge.

Ingredients

1 Cup(c)  warmed, non fat milk, 100° to 110° f
3 1/2 Cup(c)  unbleached bread flour
1 Tablespoon(T)  vital wheat gluten
1/4 Teaspoon(t)  ascorbic acid
1/2 Cup(c)  white granulated sugar
1 Tablespoon(T)  rice vinegar
1/2 Teaspoon(t)  onion powder
1 Tablespoon(T)  bread machine yeast

Preparation

Place all ingredients in bread machine pan and set for Dough. Once your machine has made the dough, roll it out on a lightly floured breadboard and form it into a ball. Place into a lightly greased bowl, cover the top tightly with plastic wrap, and let rise in a proofing oven or other warm place for about 45 minutes, or until it's at least double. Press down to deflate and transfer it to your breadboard. Cut it into 16 even pieces. Roll each piece in your hands until it is about 2 inches in diameter. If you want to fill the bun with a cooked meat mixture, or even a treat like jam, prior to steaming, then roll out the ball to a 4 inch disk and place the filling into the center. Roll the dough up and form the ball again. After forming the balls, let them stand for about 5 minutes in a warm place, covered lightly with oiled waxed paper. To cook the buns, you can use either a wooden steamer or a metal steamer but you will need to cover them while they steam. Set the buns on the steamer rack about 2 inches apart to allow for expansion. Steam for 15 to 18 minutes, covered with a high lid to allow the buns to rise. Serve hot or store covered in refrigerator, and reheat to serve later.
