2 Tablespoon(T)  unsweetened cocoa powder
2 Tablespoon(T)  unsweetened apple juice concentrate
1/2 Teaspoon(t)  vegetable oil
1/2 Cup(c)  chopped pecans
4 Tablespoon(T)  unsweetened fine coconut, premoistened
2 1/4 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
2 Tablespoon(T)  unsweetened cocoa powder
1 1/4 Cup(c)  all purpose flour
1/2 Teaspoon(t)  cherry flavor
1/3 Cup(c)  unsweetened black cherry juice concentrate
2 Tablespoon(T)  unsweetened apple juice concentrate
1/4 Cup(c)  unsweetened white grape juice concentrate
1/2 Teaspoon(t)  vegetable oil
4   egg whites
1/2 Cup(c)  unsweetened fine coconut, moisted with water and 2 teaspoons vegetable oil


Preheat oven to 325° F. Oil and flour a 9 by 9 by 2 inch baking pan. Measure out 1/2 cup unsweetened fine coconut and premoisten with water and oil. Stir and set aside. In a large bowl, combine eggs, oil, concentrates and cherry flavor. Beat mixture for 30 seconds with a hand operated mechanical beater. Add flour, cocoa and coconut and beat well. Stir in baking soda and baking powder quickly, and then mix (28 to 30 beats). Immediately pour mixture into prepared baking pan. Bake 28 to 29 minutes, or until a cake tester inserted in center of cake comes out clean. This cake settles slightly. Remove pan from oven and place on a wire rack until cake is completely cooled. While cake is cooling, combine topping ingredients. Stir well and let coconut absorb moisture. Sprinkle over cooled cake. To store, cover cooled cake in plastic and store on countertop or freeze.
