1 Cup(c)  cinnamon graham cracker crumbs
2 Tablespoon(T)  canola oil
1   nonstick cooking spray
1 Cup(c)  non dairy semisweet chocolate chips
2 Tablespoon(T)  non dairy butter
8 Ounce(oz)  non dairy cream cheese
9 Ounce(oz)  soft tofu, drained
2 Tablespoon(T)  unsweetened cocoa powder
2 Tablespoon(T)  pure maple syrup
1/2 Cup(c)  raw sugar
1/4 Teaspoon(t)  fine sea salt
2 Teaspoon(t)  pure vanilla extract

Preparation

Preheat the oven to 325°F. Lightly coat a 9 inch pie pan with spray. To make the crust: Combine the graham cracker crumbs with the oil, using a fork, or pulse in a food processor until combined. Spread the mixture into the prepared pan. Using a spatula or the back of a large spoon, press the mixture firmly on the bottom and sides of the pan. To make the filling: Melt the chocolate and butter together in a double boiler or in a microwave. Let cool. In a food processor or blender, blend together the cooled chocolate mixture, cream cheese, tofu, cocoa powder, maple syrup, sugar, salt, and vanilla. Scrape the sides occasionally, and blend until perfectly smooth. Pour the filling into the prepared crust, spreading it evenly with a spatula. Bake for 30 minutes. Turn off the oven, and leave the cheesecake in the oven to cool for up to 1 hour. Refrigerate overnight before slicing and serving.

Additional notes

Be sure to give this perfect cheesecake enough time to chill for best results!
