Recipe Description
The fruit juice concentrates lend just the right amount of moisture to this chocolate cake. Frost it with chocolate date frosting, or your favorite.

1/4 Cup(c)  unsweetened apple juice concentrate
3 Tablespoon(T)  water
3 Tablespoon(T)  water
1 Teaspoon(t)  baking soda
1 Pinch(pn)  salt
3 1/4 Cup(c)  all purpose flour, tapped lightly 4 to 5 times
1/4 Cup(c)  date sugar, packed
1/3 Cup(c)  vegetable oil
1/4 Cup(c)  unsweetened purple grape juice concentrate
1 Teaspoon(t)  unsweetened cocoa powder
1 Teaspoon(t)  unsweetened cocoa powder


Preheat oven to 325° F. Oil a 9 by 9 by 2-inch baking pan. In a large bowl, using a fork, stir together flour, date sugar, cocoa and salt. Set aside. In a medium bowl, combine oil, concentrates and water. Beat mixture for 30 seconds with a hand operated mechanical beater. Add concentrate mixture to flour mixture and beat well, by hand, for 4 minutes. Stir in baking soda quickly, and then mix (28 to 30 beats). Immediately pour mixture into prepared baking pan. Bake 40 minutes, or until a cake tester inserted in center of cake comes out clean. Remove pan from oven and place on a wire rack until cake is completely cooled. Frost with chocolate date frosting, or frosting of your choice. To store. place frosted cake in airtight container and store on countertop or freeze.
