Recipe Description
Stuffed dates are a sweet offering at the end of a meal. Add rich, melted chocolate into the mix, and you have a party waiting to happen!

1/4 Cup(c)  pecan pieces
1/4 Cup(c)  water
2 Ounce(oz)  baker's all natural unsweetened chocolate
1 Tablespoon(T)  vegetable oil
2 Tablespoon(T)  date sugar
1/4 Cup(c)  brown rice syrup, gluten free
2 Tablespoon(T)  date sugar
20   large dates, pitted


Stuff dates with pecan pieces, enlarging ends of dates with a knife if necessary. In a medium sized saucepan, combine water, chocolate, and oil. Place saucepan over medium heat until chocolate is melted, stirring constantly. Add date sugar to melted chocolate mixture, and continue stirring over medium heat for 1 minute. Add rice syrup and continue stirring over medium heat until mixture starts to become gooey, about l to 2 minutes. Remove saucepan from heat and allow mixture to cool for 1 to 2 minutes. Using a large metal spoon, dip each date in chocolate mixture until completely coated, then place on waxed paper. When all dates are coated, if you have chocolate left over in saucepan, spoon excess evenly over cooling dates. As the mixture cools, the chocolate will become less gooey. Roll each one between your palms until chocolate is smooth and date is completely covered. Wrap each date in a small piece of plastic wrap, twisting ends of wrap. Place wrapped dates in a large plastic bag and freeze until ready to serve. Let thaw 10 to 15 minutes before serving.
