Serves To:USMetric
1 Ounce(oz)  caster sugar
3   eggs
1 Teaspoon(t)  vanilla essence
1 Teaspoon(t)  baking powder
4 Ounce(oz)  walnuts, chopped
12 Ounce(oz)  whipping cream
8 Ounce(oz)  plain chocolate
1 Tablespoon(T)  vegetable oil
6 1/1000 Gram(g)  plain flour
8 Ounce(oz)  plain chocolate

Preparation

Preheat a 350° F oven. Line two 8 inch cake tins, at least 1 3/4 inches deep, with greaseproof paper and grease. Melt the chocolate and butter together in the top of a double boiler, or in a heatproof bowl set over a saucepan of hot water. Transfer to a mixing bowl and stir in the sugar. Add the eggs and vanilla and mix until well blended. Sift over the flour and baking powder. Stir in the walnuts. Divide the mixture between the prepared tins and spread level. Bake until a skewer inserted in the center comes out clean, for about 30 minutes. Let stand 10 minutes, then unmould and transfer to a rack. When the cakes are cool, whip the cream until firm. With a long serrated knife, carefully slice each cake in half horizontally. Sandwich the layers with some of the whipped cream and spread the remainder over the top and sides of the cake. Refrigerate until needed. For the chocolate curls, melt the chocolate and oil in the top of a double boiler or a bowl set over hot water. Transfer to a non-porous surface. Spread to a 3/8 inch thick rectangle. Just before the chocolate sets, hold the blade of a straight knife at an angle to the chocolate and scrape across the surface to make curls. Place on top of the cake.
