Chorizo, Cranberry And Cornbread Stuffing

Everyone knows that cranberries are traditional with a holiday meal, but chorizo?  This unusual stuffing combines tradition with delicious!

1 Pinch(pn)  pepper, to taste
1 Pinch(pn)  salt, to taste
1/2 Cup(c)  vegetable broth
1 Teaspoon(t)  cayenne pepper
1 Cup(c)  yellow or red onion, diced
12 Ounce(oz)  soy chorizo, casings removed and crumbled
2 Cup(c)  prepared cornbread
1/2 Cup(c)  dried cranberries


Preheat the oven to 400° F.  Have ready a 9 inch square baking dish.  Into a mixing bowl, crumble the cornbread.  Add the cranberries, soy chorizo, onion and cayenne pepper and mix well, using your hands.  Add the vegetable broth and toss to coat.  Season with salt and pepper.  Transfer to the baking dish and bake, uncovered, for 30 minutes, or until the top begins to brown.
