Recipe Description
These flaky pastry puffs, filled with spicy chorizo sausage and grated cheese, make a really superbaccompaniment to a glass of cold sherry or beer. You can use any type of hard cheese for the puffs, but for best results, choose a mild variety, as the chorizo has plenty of flavor.

7 377/400 Gram(g)  puff pastry, thawed if frozen
4 119/2000 Gram(g)  cured chorizo sausage, finely chopped
1 153/200 Gram(g)  cheese, grated
1   small egg, beaten
1 Teaspoon(t)  paprika

Preparation

Roll out the pastry thinly on a lightly floured work surface. Using a 3 inch cutter, stamp out as many rounds as possible, then re-roll the trimmings,if necessary, and stamp out more rounds to make 16 in all. Preheat the oven to 450° F. Put the chorizo sausage and grated cheese in a bowl and toss together lightly. Lay one of the pastry rounds in the palm of your hand and and place a little of the chorizo mixture across the center. Using your other hand, pinch the edges of the pastry together along the top to seal, as when making a miniature turnover. Repeat the process with the remaining rounds to make 16 puffs in all. Place the pastries on a non-stick baking sheet and brush lightly with the beaten egg to glaze. Using a small sifter or strainer, dust the tops lightly with a little of the paprika. Bake the pastries for 10 to 12 minutes, until they are puffed and golden brown. Transfer the pastries to a wire rack. Leave to cool slightly for about 5 minutes, then transfer to a warm platter and serve the chorizo pastry puffs warm, lightly dusted with the remaining paprika.
