Recipe Description
This substantial and satisfying Mexican soup featuring pork, often a pig's head, and hominy is traditionally served at Christmastime. This version calls for a tender cut of pork and a shorter cooking period. A variety of toppings are usually added at the table.

1 Tablespoon(T)  vegetable oil
1 Pound(lb)  pork tenderloin, cut into 3/4 inch pieces
2 Tablespoon(T)  chili powder
1 Cup(c)  yellow onion, chopped
2 Clove(clv)  garlic, minced
15 Ounce(oz)  white hominy, drained and rinsed
1/2 Cup(c)  cooked, cubed ham
16 Ounce(oz)  tomato sauce
2 Cup(c)  chicken stock or broth
14 1/2 Ounce(oz)  tomatoes, with juice, diced
1/2 Teaspoon(t)  oregano, dried
1/2 Teaspoon(t)  cumin, ground
1/2 Teaspoon(t)  salt
1 Pinch(pn)  pepper, freshly ground, to taste

Preparation

In a large Dutch oven over medium heat, warm oil. Add pork and chili powder and saute for 2 minutes. Add onion and garlic and saute until tender, about 5 minutes longer. Add remaining ingredients. Reduce heat to medium low and simmer, uncovered, until flavors are blended, about 15 minutes. Ladle into bowls and serve.
