Recipe Description
This traditional fruit and nut bread is a mainstay during the holidays. It is even better on the second day, so make it in advance of your serving plans.

5   eggs
2 Cup(c)  confectioners' sugar
1/2 Pound(lb)  margarine, creamed
3 Tablespoon(T)  vodka
1 Teaspoon(t)  vanilla extract
1 Tablespoon(T)  lemon rind, grated
2 Tablespoon(T)  baking powder
2 1/4 Cup(c)  flour
3/4 Cup(c)  walnuts, finely chopped
2/3 Cup(c)  raisins
4 Ounce(oz)  candied orange rind, finely chopped
1 Teaspoon(t)  cornstarch


Beat the eggs with the sugar for 5 minutes at high speed. Add to the margarine by small portions. Add vodka, vanilla and lemon rind beating constantly. Add baking powder and flour, beat 5 more minutes. The batter is thick. Mix the nuts, raisins, orange rind and cornstarch. Combine with the batter. Bake at 350 degrees F for 1 hour in a loaf or ring pan which has been buttered and sprinkled with bread crumbs. Serve thinly sliced.
