Your own homemade biscotti is so delicious. It's difficult to find a biscotti at a bakery or coffee shop for less than a dollar. Make your own and save!

1/2 Ounce(oz)  dry yeast
1/2 Cup(c)  warm water
1/2 Cup(c)  butter
1 Cup(c)  sugar, divided
1 Teaspoon(t)  salt
2 Teaspoon(t)  cinnamon, divided
2 Cup(c)  boiling water
3   eggs
8 Cup(c)  all purpose flour


In small bowl, combine yeast with 1/2 cup water and set aside. In large bowl, combine butter, 1/2 cup sugar, salt. and 1 teaspoon cinnamon. Pour boiling water over and stir until butter melts. Let stand until just warm. Beat in eggs and yeast mixture. Add 5 cups flour, a cup at a time, beating well after each addition. Then stir in enough flour to make a firm dough. Knead on floured surface until smooth, about 5 minutes. Place in greased bowl, turning to grease top. Cover and let rise until doubled, about 1 hour. Punch down and divide into four balls. Grease 2 cookie sheets with unsalted butter. On prepared cookie sheets, roll out balls into 5 by 8 inch rectangles. Cover and let rise until doubled, about 30 minutes. Preheat oven to 350°F. Bake loaves until light golden brown and set, about 25 to 35 minutes. Let cool on wire racks for 30 minutes. Increase oven temperature to 400°F. Slice each loaf into eight 1 inch pieces. In small bowl, combine 1/2 cup sugar with 1 teaspoon cinnamon. Dip both cut sides of slices into cinnamon sugar and return to cookie sheets. Bake again, turning once, until brown and crisp, about 5 minutes on each side. Cool completely on wire racks.
