Cinnamon raisin bread is one of those wonderful, kid friendly snacks. Spread with a little peanut or apple butter, the taste is divine.

2 Tablespoon(T)  granular soy
1 Tablespoon(T)  olive oil
1 Tablespoon(T)  apple cider vinegar
1 Teaspoon(t)  vanilla extract
2 7/8 Cup(c)  unbleached bread flour
2 Tablespoon(T)  potato flour
1/4 Teaspoon(t)  ascorbic acid
2 Tablespoon(T)  vital wheat gluten
4 Tablespoon(T)  granulated sugar or splenda
1/4 Teaspoon(t)  granular onion powder
2 1/2 Teaspoon(t)  bread machine yeast
1 Cup(c)  black raisins, not packed, soaked in water for 10 minutes, then drained
1 1/2 Teaspoon(t)  cinnamon, ground
2 Tablespoon(T)  warm low sodium water, 105° to 115° f

Place everything but the raisins and cinnamon in bread machine in order listed, or in the order your manufacturer suggests. Set for 2 pound loaf, medium crust, and either white bread or fruit and nuts, if your machine has this setting. Add the fruit and cinnamon when buzzer sounds. When bread is done, cool on rack for about 15 minutes before slicing.
