If you love cinnamon toast, then you must try these muffins! This is a great recipe to make with kids, as they can help with stirring and coating the muffin tops.

1/2 Cup(c)  sugar
1/2 Cup(c)  milk
1/3 Cup(c)  vegetable oil
1   large egg
1 1/2 Cup(c)  all purpose flour
1 1/2 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  salt
1/4 Teaspoon(t)  nutmeg, ground
1 Teaspoon(t)  cinnamon, ground
1/2 Cup(c)  margarine


Heat oven to 350 degrees F. Grease bottoms only of 12 muffin cups with shortening. Mix dry ingredients in a medium bowl with fork. Add wet ingredients and mix just until all the flour is wet. Do not stir too much, or batter will be lumpy. Spoon batter into muffin cups until 2/3 full. Bake 20 to 25 minutes or until golden brown. While muffins are baking, mix cinnamon and sugar in a small bowl, then set aside. Melt margarine in saucepan over low heat, then remove from heat. Immediately remove muffins from pan. Roll hot muffins in the melted margarine, then in the cinnamon and sugar mixture. Serve hot.
