1 1/2 Cup(c)  all purpose flour
1/2 Cup(c)  whole wheat flour
3 Tablespoon(T)  sugar
1/4 Teaspoon(t)  salt
2/3 Cup(c)  butter
1/4 Cup(c)  fresh lemon juice
2 Teaspoon(t)  lemon rind, grated
1 Tablespoon(T)  cold water, if necessary


In a large bowl, stir together both flours, the sugar and salt. Using a pastry cutter or two knives, cut in the butter until the mixture resembles coarse cornmeal. Stir together the lemon juice and lemon rind. Pour 1 tablespoon of the lemon juice over one section of the flour. Using a fork, work the dough until combined, then continue with remaining lemon juice. If all the flour is not moist and the dough cannot be formed into a ball after you've added all the juice, use the water. Divide the dough in half and roll out as directed in specific recipes.

Additional notes

Variation: Use orange rind and juice instead of the lemon.
