6 Slice(sli)  italian bread, cut 1/2 inch thick
2 Clove(clv)  garlic, each cut in half
3 Tablespoon(T)  olive oil
1/4 Cup(c)  mayonnaise
1/4 Cup(c)  parmesan cheese, freshly grated
3 Tablespoon(T)  fresh lemon juice
2 Tablespoon(T)  water
2 Teaspoon(t)  anchovy paste
1 Bunch(bn)  romaine lettuce, torn into bite sized pieces


Preheat oven to 400 degrees F. Rub bread slices with cut sides of garlic. Brush both sides of bread with 2 tablespoons oil. Cut bread into 1/2 inch pieces. Place in jelly roll pan. Bake until golden brown and crisp, about 7 minutes. Meanwhile, prepare dressing: In large salad bowl, with wire whisk, mix mayonnaise, Parmesan, lemon juice, water, remaining 1 tablespoon oil and anchovy paste until blended. Add lettuce and croutons. Toss to coat.
