Recipe Description
At our house, summer meals are often accompanied by a bowl of cucumber and onions steeped in a lightly seasoned vinegar. This salad is one of my mother's favorites, and I inherited her love for it.

Serves Tool

3 Tablespoon(T)  white wine vinegar
1/2 Teaspoon(t)  coarse (kosher) salt, or more to taste
1/4 Teaspoon(t)  sugar, or more to taste
1   hothouse (seedless english) cucumber, unpeeled, cut into 1/2 inch thick slices
1/2   red onion, cut in half through the stem end and sliced very thinly crosswlse


Place the vinegar, salt and sugar in a medium bowl and stir until the salt and sugar dissolve. Taste for seasoning, adding more salt and/or sugar as needed. Add the cucumber and onion to the vinegar mixture and toss to coat. If you are not planning on serving the salad immediately, it can be refrigerated, covered, for up to 3 days.
