Recipe Description
This is a standard vegetarian recipe, easy to prepare, with complementary protein provided by the brown rice and the cheese.  My favorite vegetable combination for this recipe is broccoli, carrots, onions, yellow squash and mushrooms.  I start cooking the broccoli and carrot first, because they take longer, then add the other veggies as cooking progresses.  Chunks of red cabbage, zucchini, tomatoes, green beans and cauliflower are also delicious.  Just put in your favorite vegetables, and enjoy!

4 Tablespoon(T)  light cheddar cheese, grated
1 Dash(ds)  tamari sauce
2 Cup(c)  mixed vegetables of choice, cut in chunks
1 Cup(c)  brown rice
1 3/4 Cup(c)  water


Pour the water into a saucepan, cover, and bring to a boil.  Pour in the brown rice, cover, and reduce heat to simmer.  Do not stir.  After rice has been cooking for about 20 minutes, start steaming your vegetables.  When all veggies are just tender, ladle them over the cooked rice, and top with the cheese.  Let everyone add their own bit of tamari sauce if they desire.
