2   large eggs, separated
1 Pinch(pn)  salt
2 Ounce(oz)  superfine sugar
5 Tablespoon(T)  butter, melted and cooled
5 Tablespoon(T)  coconut milk
4 Ounce(oz)  self rising flour
1/2 Teaspoon(t)  baking powder
3 Tablespoon(T)  dry unsweetened coconut
4 Tablespoon(T)  preserved ginger syrup
3 Tablespoon(T)  lime juice


Cut a circle of parchment paper and press into a 7 inch steamer basket to line it. Whisk the egg whites with the salt in a clean, dry bowl until stiff. Gradually whisk in the sugar, 1 tablespoon at a time, whisking hard after each addition until the mixture forms stiff peaks. Whisk in the yolks, then quickly stir in the butter and coconut milk. Sift the flour and baking powder over the mixture, then fold in lightly and evenly with a large metal spoon. Fold in the coconut. Spoon the mixture into the lined steamer basket and tuck the spare paper over the top. Place the basket over boiling water, then cover and steam for 30 minutes. Transfer the cake to a plate, remove the paper, and let cool slightly. Mix the ginger syrup and lime juice together and spoon over the cake. Cut into squares.
