With brown sugar and chocolate chips, these muffins are really a dessert. Unlike many desserts, however, they come with the benefit of whole grain goodness.

Ingredients

2 Cup(c)  white whole wheat flour
1 1/2 Teaspoon(t)  baking powder, divided
1/2 Teaspoon(t)  salt
1/2 Cup(c)  applesauce
1/2 Cup(c)  flaxseed meal
1/4 Cup(c)  canola oil
3/4 Cup(c)  light brown sugar, packed
1/4 Cup(c)  coconut milk
1 Cup(c)  chocolate chips
3/4 Cup(c)  coconut flakes

Preparation

Preheat oven to 350° F. In a medium mixing bowl combine flour, 1 teaspoon baking powder, and salt. In a large mixing bowl combine applesauce with 1/2 teaspoon baking powder. Add flaxseed meal, canola oil, brown sugar and coconut milk to the applesauce mixture. Slowly add dry ingredients to wet. Stir to combine. Stir in chocolate chips and coconut flakes. Bake 25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
