Recipe Description
This creamy coconut sorbet with a subtle accent of lemon is very simple to make, but allow time for the coconut milk to absorb the lemongrass flavor. The alcohol in the tablespoon of coconut liqueur helps the sorbet freeze without becoming icy.

Ingredients

2 3/4 Cup(c)  sugar
4   fresh lemon grass stalks, finely chopped
1   lemon zest, grated
28 Ounce(oz)  unsweetened light coconut milk
1 Tablespoon(T)  coconut liqueur

Preparation

Place the sugar, lemon grass, lemon zest and coconut milk in a medium sized saucepan and bring to a boil over high heat, stirring occasionally to dissolve the sugar. Remove the saucepan from the heat, cover it with a lid, and let the mixture steep at room temperature for 1 hour. Strain the coconut milk mixture through a sieve into a medium sized bowl and discard the solids. Cover the bowl and refrigerate the coconut milk mixture until it is thoroughly chilled, at least 2 hours. Add the coconut liqueur, then place the mixture in the bowl of an ice cream maker. Churn the sorbet following the manufacturer's instructions. Transfer the sorbet to an airtight container and freeze it for at least 2 hours before serving. For longer storage, place a piece of plastic wrap directly on the surface of the sorbet to prevent ice crystals from forming. Covered tightly, the sorbet can be frozen for up to 2 weeks.
