This light spread is delicious on top of a white vanilla layer cake or pastries.

Serves Tool

1/2 Teaspoon(t)  pure vanilla extract
2 Tablespoon(T)  unsweetened white grape juice concentrate
1/2 Cup(c)  dry unsweetened fine coconut
4 Teaspoon(t)  vegetable oil
2 Tablespoon(T)  unsweetened black cherry juice concentrate
1 1/2 Cup(c)  water
2 Tablespoon(T)  minute tapioca


In a medium sized saucepan, stir together all ingredients.  Allow mixture to sit for 5 minutes.  Place saucepan over medium heat and bring mixture to a boil, stirring constantly.  Continue boiling and stirring for 1 minute, then remove pan from heat and allow mixture to cool.  When mixture has cooled for 3 1/2 to 4 hours, stir, and then spread over cooled cake.  Sprinkle with chopped nuts, if desired.
