Coffee Fudge Cake

Recipe Description
Birthdays in our house would not be complete without this cake!  The cake is both moist and rich, and should be topped with your favorite frosting.

1 Teaspoon(t)  vanilla
1 Tablespoon(T)  warm water
1 Tablespoon(T)  instant coffee granules
3   eggs
3/4 Cup(c)  shortening
5 1/2 Cup(c)  granulated sugar
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  cinnamon, ground
1 Teaspoon(t)  baking soda
2 Teaspoon(t)  baking powder
3/4 Cup(c)  unsweetened cocoa powder
2 Cup(c)  all purpose flour


In a medium bowl, sift together flour, cocoa, baking powder, baking soda, cinnamon and salt.  In another large bowl, using an electric mixer, beat sugar and shortening until fluffy.  Beat in eggs, one at a time, until well combined.  Dissolve coffee in warm water.  Beat flour mixture and coffee alternately into shortening mixture, making 2 additions of dry and 1 of wet.  Stir in vanilla.  Spoon evenly into prepared pan.  Bake in preheated oven for 55 to 65 minutes, or until tester inserted in center comes out clean.  Let cool in pan on a wire rack for 10 minutes.  Run a knife around edge of pan.  Remove cake and discard paper.  Let cool completely on rack.

Additional notes

Typically you frost this cake, or you can change it up by using a simple sauce.
