Recipe Description
Traditional borscht can be served warm or chilled. Garnish with cucumbers, eggs, scallions and sour cream, if desired.

14 3/25 Gram(g)  beets
5 Cup(c)  hot water
2 Teaspoon(t)  salt
4 Teaspoon(t)  vinegar
21 9/50 Gram(g)  potatoes, peeled
1 Slice(sli)  sugar cucumber, sliced
1 Pinch(pn)  sugar, to taste


Slice beets thinly and place in a pot. Pour hot water on top. Add salt and vinegar and bring to a boil. Pour off one half of the liquid into a bowl to keep. Let it cool. Cook beets in remaining liquid until tender. Cut potatoes into cubes and add to beets. Cook 20 minutes. Cool. Add reserved liquid and sugar. Pour soup into bowls.
