These corn muffins are excellent served with chili or lentil soup.

Ingredients

3 Tablespoon(T)  canola oil
1 Cup(c)  milk
1/4 Cup(c)  applesauce
1/2 Cup(c)  agave nectar
1 Teaspoon(t)  baking soda
2 1/4 Teaspoon(t)  baking powder, divided
1 Cup(c)  white whole wheat flour
1 Cup(c)  cornmeal

Preparation

Preheat oven to 400° F. In a medium bowl, combine cornmeal, flour, 2 teaspoons of baking powder and baking soda. In a large bowl, combine applesauce and 1/4 teaspoon baking powder. Add agave nectar, milk and oil to applesauce mixture. Slowly mix dry ingredients into wet, being careful not to over stir. Divide batter into lightly oiled muffin pan. Bake 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
