Corn bread muffins are a treat to be enjoyed at anytime of day. This recipe utilizes low fat ingredients, along with a little kick of hot sauce to perk up your taste buds.

1 Cup(c)  plain white cornmeal
2 Tablespoon(T)  all purpose flour
1/2 Teaspoon(t)  sugar
1/2 Teaspoon(t)  onion powder
2 Teaspoon(t)  low sodium baking powder
1/4 Cup(c)  egg substitute
1/2 Cup(c)  fat free creamer
1/2 Cup(c)  fat free cottage cheese
1 Teaspoon(t)  hot sauce

Preparation

Heat muffin tin inside preheated 425° F oven. In a mixlng bowl, whisk together cornmeal, flour, sugar, onion powder and baking powder. Blend egg substitute, creamer, cottage cheese and hot sauce in a separate bowl. Add the liquid mixture all at once to the dry mixture. Remove the muffin tin from the oven and coat with cooking spray. Fill each cup 1/2 full with cornmeal mix. Bake for 12 to 15 minutes, or until golden brown.
