Corned beef has always been associated with Cork, Ireland. In the past, beef corning was the city's most important industry. This recipe reflects the traditional wet pickle of salt, sugar, saltpeter and water.

1/2 Teaspoon(t)  salt
1 Tablespoon(T)  sugar
3 Tablespoon(T)  saltpeter
2 Cup(c)  water
2 Pound(lb)  fresh beef brisket

Preparation

Mix together ingredients, pour and pack around fresh beef brisket. Refrigerate overnight before cooking.
