Salads are a great way to enjoy everything from you garden's bounty, or the fresh catch of the day. Salads can be made light, as in a first course serving, or be made as a complete and hearty meal. Salads comprise all kinds of ingredients and can be wonderfully surprising in flavors.

Asian Pork Salad

If you wish, sprinkle the salad with toasted sesame seeds before serving. Mung bean sprouts or sliced water chestnuts can be used in place of the celery.

The kasha really requires a lot of dressing to make this salad work. If you are watching your fat
intake, substitute rice for the kasha and use 1/3 to 1/2 less dressing.
