1/2 Cup(c)  vegetable oil
1 Cup(c)  cranberries, fresh or frozen
1 Cup(c)  unsweetened applesauce
2   eggs
1/4 Teaspoon(t)  cardamom, ground
1/4 Teaspoon(t)  nutmeg, ground
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  baking soda
1 Teaspoon(t)  cinnamon, ground
1 Tablespoon(T)  orange zest, grated
1 Cup(c)  granulated sugar
2 Cup(c)  all purpose flour


In a large bowl, stir together flour, sugar, orange zest, cinnamon, baking soda, salt, nutmeg and cardamom. In a medium bowl, whisk together eggs, applesauce, cranberries and oil. Using a fork, stir into dry ingredients just until moistened. Spoon into prepared muffin cups. Bake in preheated 350 degree F oven for 15 to 20 minutes, or until tops spring back when lightly touched.
