Cranberry Chip Cookies

Recipe Description
A lovely, soft cookie bursting with cranberries and nuts. Try pistachio nuts for a unique flavor and even more color! You can use frozen cranberries, but be sure to pat them dry after chopping and don't over mix, or they may smear.

Ingredients

2 Teaspoon(t)  hot water
2 Tablespoon(T)  corn syrup
1/2 Cup(c)  semisweet chocolate chips
1/2 Cup(c)  vanilla milk chips
1 Cup(c)  nuts, chopped
2 1/2 Cup(c)  cranberries, coarsely chopped
1/4 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  baking powder
3 Cup(c)  all purpose flour
1   egg
2 Tablespoon(T)  orange juice
1/4 Cup(c)  milk
1/2 Cup(c)  butter
3/4 Cup(c)  brown sugar, packed
1 Cup(c)  granulated sugar

Preparation

Heat oven to 375°F. Grease a cookie sheet. Mix sugars and margarine in large bowl. Stir in milk, orange juice and egg. Stir in flour, baking powder, salt and baking soda. Carefully stir in cranberries, nuts and vanilla milk chips. Drop dough by rounded teaspoonfuls about 2 inches apart on cookie sheet. Bake 10 to 15 minutes or until light brown. Remove from cookie sheet. Cool on wire rack. Spread with Chocolate Glaze. Heat chocolate chips, margarine and corn syrup over low heat, stirring constantly, until chocolate chips are melted. Cool slightly. Stir in water, 1 teaspoon at a time, until consistency of thick syrup.

Additional notes

Use shortening when greasing cookie sheets, and only grease if specified in the recipe. Margarine or butter can cause the cookies to stick and over brown. Re-grease sheets as needed during baking.
