During the Christmas holidays, when everyone is baking high fat cookies and candies for friends and neighbors, why not make something a little different? A jar of homemade jelly and loaf of good bread makes a great gift without all the calories.

4 1/2 Cup(c)  preserving or granulated sugar, warmed
2 1/2 Cup(c)  water
1   orange, juiced and zested
1 Pound(lb)  sweet apples, washed and chopped with skins and cores intact
8 Cup(c)  cranberries


Put the cranberries and apples in a pan with the orange rind, juice and water. Bring to a boil, then cover and simmer for 1 hour. Remove from the heat and cool slightly. Pour into a jelly bag suspended over a non-metallic bowl and leave to drain overnight. Measure the strained juice into a preserving pan. Add 2 1/2 cups sugar for every 1 pint of juice. Heat, stirring, over low heat until the sugar has dissolved. Increase the heat and boil, without stirring, for 5 to 10 minutes, or until the jelly reaches setting point (220° F). Remove from the heat and skim off any scum, using a slotted spoon. Ladle into warmed, sterilized jars, cover and seal. Leave to cool, then label.
