These delicate, almost puff pastry-like stars are a favorite with my family. We sandwich them with pale blue filling to suit the holiday.

1/2 Pound(lb)  unsalted butter, at room temperature
1/3 Cup(c)  heavy (whipping) cream
2 Cup(c)  all purpose flour
1/2 Cup(c)  sugar, as needed
8 Ounce(oz)  buttercream frosting


Blend the butter and cream with an electric mixer on medium speed until well combined, about 1 minute. Reduce the speed to low, add the flour, and beat just until combined. Divide the dough into four balls and roll each ball out between two pieces of waxed or parchment paper until it is 1/8 to 1/4 inch thick. Without removing the paper, pile the sheets of dough on a baking sheet and freeze until firm, about 30 minutes. Preheat the oven to 350° F. Line a baking sheet with parchment paper or leave it ungreased. Pour sugar into a shallow dish for dipping. Remove a sheet of dough from the freezer, remove the paper, and cut out cookies with a small Star of David cookie cutter. Gather up the scraps, reroll, and cut out as many cookies as will fit on one baking sheet. Dip each cut-out cookie in the sugar, covering both sides, and place them close together on the baking sheet (they will not spread). Using a fork, prick each cookie four times to make sixteen holes (to prevent overpuffing), and bake one sheet at a time on the center oven rack until the cookies are barely starting to change color, 7 to 9 minutes. Let the cookies cool on the baking sheet set on a wire rack. Repeat with the remaining dough. Spread the frosting lightly over half the cookies, and press the other cookies on top to make a sandwich.
