Recipe Description
An easy and light soup that may be served warm or chilled. My family loves this chilled, using lettuce fresh from the garden. A great way to cool off on a hot day!

Ingredients

2   small heads of lettuce
1 Pint(pt)  soup stock
1 Cup(c)  milk
1 Tablespoon(T)  butter
1 Tablespoon(T)  flour

Preparation

Tear into small bits one large or two small heads of lettuce, cover with a pint of soup stock, and boil 10 minutes. Cream a tablespoon of butter with the same amount of flour, add to the hot soup and stir until it thickens. Add one cup of milk or cream, heat again, and serve with squares of toasted bread.
