Serves Tool

Serves To:USMetric
32 Ounce(oz)  frozen peas, thawed
2 1/4 Cup(c)  milk
1/8 Teaspoon(t)  black pepper, ground
1/8 Teaspoon(t)  nutmeg, ground
1/4 Teaspoon(t)  thyme, dried
1/2 Teaspoon(t)  salt
2 Tablespoon(T)  butter
10 Ounce(oz)  bag pearl onions
1 Tablespoon(T)  flour

In 12 inch skillet, heat 1 inch water to boiling over high heat.  Add onions.  Heat to boiling.  Reduce heat to low and cover and simmer until tender, 10 to 15 minutes.  Drain.  When cool enough to handle, peel onions, leaving a bit of root end attached help onions hold their shape.  Meanwhile, in 2 quart saucepan, melt butter over medium heat.  Stir in flour, salt, thyme, nutmeg, and pepper until blended.  Cook, stirring constantly, for 1 minute.  With wire whisk, gradually stir in milk.  Cook, stirring, until sauce has thickened slightly and boils.  Return onions to skillet.  Add sauce and peas.  Cover and cook, stirring often, over medium high heat until sauce boils and peas are heated through.
