Recipe Description
In recent years there has been a growing, though misguided belief that all vegetables should be served crisp and only lightly cooked.  1 don't agree.  Sometimes stewed vegetables are just the ticket.

Ingredients

1 Pound(lb)  green beans, trimmed
1/4 Teaspoon(t)  kosher salt
1/4 Teaspoon(t)  tabasco sauce
1/4 Teaspoon(t)  allspice, ground
1/2 Teaspoon(t)  oregano, dried
1/2 Teaspoon(t)  thyme, dried
14 Ounce(oz)  stewed tomatoes
3 Clove(clv)  garlic, minced
1/2   green bell pepper, chopped
1   rib celery, chopped
1/2 Cup(c)  onions, chopped
2 Teaspoon(t)  vegetable oil

Preparation

Heat the oil in a medium saucepan or saute pan and saute the onions until translucent.  Add the celery, bell pepper and garlic.  Saute until the garlic turns golden.  Stir in the remaining ingredients and bring to a full simmer.  Reduce to a gentle simmer and cook over medium low heat, covered, until the beans are tender, about 10 to 15 minutes.
