This is the classic green salad served by the Creoles. It is worth the effort to preapare as some og the greens may be challenging to find .

1 Bunch(bn)  watercress
2   belgian endive
1 Bunch(bn)  romaine lettuce
1 Bunch(bn)  bibb lettuce
3/4 Cup(c)  olive oil
1/2 Teaspoon(t)  powdered mustard
1 Teaspoon(t)  white pepper, ground
1 Teaspoon(t)  salt
1/4 Cup(c)  vinegar


Combine the vinegar, salt, pepper and powdered mustard. Slowly whisk in the olive oil. Set aside while you prepare the greens. Wash and dry all the greens. Remove all the undesirable parts and discard. Break all the large leaves into 2 inch pieces. Toss the greens together with the vinaigrette dressing.
