Somehow crepes always seem special.  They can be filled with a sweet or savory filling, and are a great way to use up leftovers.

1 Tablespoon(T)  vegetable oil
5 1/2 Cup(c)  lactose free milk
2   eggs
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  granulated sugar
1 Cup(c)  all purpose flour


In a small bowl, stir together flour, sugar and salt.  In a measuring cup, whisk together eggs, milk and oil.  Pour into dry ingredients and whisk until smooth.  Cover and refrigerate for at least 1 hour or overnight.  Spray a nonstick skillet with nonstick baking spray and heat over medium high heat.  For each crepe, spoon 2 tablespoons of batter into pan for a 12 cm appetizer sized crepe, or 1/4 cup for a dessert or dinner sized crepe, tilting pan to coat bottom.  Cook until pale brown around edges and starting to pull away from pan.  Flip and cook until second side is browned.  Stack crepes on a plate, separating with pieces of waxed paper.  Fill with your favortie topping and serve.
