A sweet treat that isn't loaded with fat or calories. These crepes are delicious served on their own, or with a scoop of vanilla ice cream.

Ingredients

1 Tablespoon(T)  sunflower oil, for frying
2 3/4 Cup(c)  2% milk
1   extra large egg
1 Pinch(pn)  salt
1 Cup(c)  all purpose flour, sifted
8 Ounce(oz)  plain yogurt, to serve
1 Pinch(pn)  cinnamon, ground
4 Tablespoon(T)  superfine sugar
5 Tablespoon(T)  water
2 Pound(lb)  crisp green apples, peeled, cored and sliced
3 Tablespoon(T)  dark rum
1/2 Cup(c)  raisins

Preparation

To make the filling: Place the raisins in a small bowl, cover with the rum, and leave to stand for 30 minutes. Place the apples and water in a large pan, cover, and cook gently for about 10 minutes, stirring occasionally. Stir in the sugar, cinnamon and soaked raisins. To make the crepes: Place the flour and salt in a large bowl. Add the egg and half the milk and mix for 1 minute until the mixrure is bubbly. Use an electric hand mixer if you have one. Stir in the rest of the milk. Pour the batter into a jug and leave to stand for 20 minutes. Add more milk as needed to obtain the consistency of very thick cream.
