Recipe Description
A very simple recipe to make with ingredients that are already stocked in your pantry. Wonderful served with a crisp salad or wilted greens.

1 Cup(c)  japanese breadcrumbs
2 Tablespoon(T)  fresh parsley, chopped
2 Teaspoon(t)  lemon rind, grated
1 Teaspoon(t)  garlic, minced
6 Ounce(oz)  cod fillets
1 Teaspoon(t)  salt
2 Tablespoon(T)  butter, melted

Preparation

Combine first 4 ingredients in a small bowl. Place fillets on a lightly greased wire rack in a pan; sprinkle evenly with salt. Spoon breadcrumb mixture evenly onto fillets, pressing down gently. Drizzle evenly with 2 Tbsp. melted butter. Bake at 400°F for 17 minutes or until breadcrumbs are golden and fish flakes with a fork.
