Recipe Description
Some Germans leave the skin on cucumbers, as long as the cucumbers are sliced extra thin. In any event, select thinner instead of fatter cucumbers.

3   large cucumber, peeled and thinly sliced
2 Teaspoon(t)  salt
1 1/2 Cup(c)  sour cream
1/3 Teaspoon(t)  white pepper, ground
1/4 Cup(c)  wine vinegar
1 Tablespoon(T)  chives, minced


Place cucumber slices in a medium bowl. Add salt. Mix lightly until salt adheres evenly to cucumber slices. Cover and refrigerate 1 hour. Drain juice from cucumber slices. In a small bowl, combine sour cream, white pepper, wine vinegar and chives. Add to cucumber slices and gently mix. Cover and refrigerate until ready to serve.
