Curried Chicken Salad With Raisins And Apples

Since no two curry powders are exactly alike, you might want to put half the curry into the dressing, taste it, and then decide how much more to mix in.

1 Teaspoon(t)  sugar
1/8 Teaspoon(t)  cayenne pepper (optional)
1 Tablespoon(T)  curry powder
1/2 Teaspoon(t)  turmeric, ground
3/4 Cup(c)  plain low fat yogurt
1 Cup(c)  cottage cheese
2 Teaspoon(t)  lemon juice
2   apples
1/2 Cup(c)  raisins
2/3 Cup(c)  red onions, thinly sliced
1/2 Cup(c)  celery, diced
1   green bell pepper, chopped
4 Cup(c)  skinless chicken breast, cooked and cubed

Preparation

Toss the chicken with the bell pepper, celery, onions and raisins. Cut the apples into cored wedges, then halve. Toss with the lemon juice to prevent browning. Add the apples to the chicken mixture. In a food processor, puree the remaining ingredients until the dressing is smooth and thick. Pour the dressing over the salad and toss to coat.
