A little sweet, a little spicy. If you don't want to make the coconut rice, you can use any cookedrice instead, but the salad won't be quite as interesting.

1 1/2 Cup(c)  coconut rice, cooked
3/4 Cup(c)  fresh peas , cooked
1/3 Tablespoon(T)  cashews, chopped
2 Tablespoon(T)  mayonnaise
2 Teaspoon(t)  unflavored yogurt
2 Teaspoon(t)  curry powder
1 Teaspoon(t)  distilled white vinegar
1/4 Teaspoon(t)  turmeric, ground
1/4 Teaspoon(t)  red pepper, ground


In a large bowl, stir together the rice, peas and cashews. In a small bowl, stir together the mayonnaise, yogurt, curry powder, vinegar, turmeric and pepper. Pour the dressing over the rice mixture and toss to combine.
