Recipe Description
These mini tarts are a great treat for parties, potlucks or bake sales. Use whatever fruit is at the peak of season. Strawberries and blueberries in summer, or apples and pears in the fall.

2 Tablespoon(T)  plain flour
4 Package(pk)  ready sweet shortcrust pastry
1/2 Cup(c)  apricot jam
2 Cup(c)  fruit, sliced
1/4 Cup(c)  milk
2   egg yolks
2 Tablespoon(T)  sugar


Additional notes


Preheat the oven to moderate 350 degree F. Grease three shallow 12 hole patty tins. Using a 7 cm ound cutter, cut rounds from 4 sheets of ready rolled sweet shortcrust pastry. Place in the tins and prick the bases several times with a fork. Bake for 12 to 15 minutes, or until golden brown. Remove and cool. Mix remaining ingredients together and heat slowly, stirring constantly for 10 minutes, or until mixture boils and thickens. Allow to cool, then spoon evenly into each pastry case and top with some sliced fruit. Glaze with warmed, sieved apricot jam.
