Recipe Description
This is a delicious Christmas cookie recipe. These cookies should be baked and cut out to your taste. Frost, ice and decorate them to suit your special occasion or holiday gathering.

1   lemon rind, grated
10 121/2000 Gram(g)  plain flour
2 Teaspoon(t)  salt
1 Teaspoon(t)  vanilla essence
1   egg yolk
1   egg
10 121/2000 Gram(g)  caster sugar
6 1/1000 Gram(g)  unsalted butter, at room temperature


Preheat a 350 degree F. With an electric mixer, cream the butter until soft. Add the sugar gradually and continue beating until light and fluffy. Using a wooden spoon, slowly mix in the whole egg and the egg yolk. Add the vanilla, lemon rind and salt.  Stir to mix well. Add the flour and stir until blended. Gather the mixture into a ball, wrap in greaseproof paper, and refrigerate for at least 30 minutes. On a floured surface, roll out the mixture about 1/2 inch thick. Stamp out shapes or rounds with biscuit or cookie cutters. Bake until lightly colored, about 8 minutes. Transfer to a rack and let cool completely before icing and decorating, if desired.
